Ingredients
- 500 g green/young papaya
- 1.5 cup water
- 1 cup white vinegar
- 1/2 cup sugar
- 1 tsp salt
- 1/2 to 1 red chiles (to taste)
- 2 tsp ginger, freshly grated

Directions
- Mix water, vinegar, ginger, chile, and salt and sugar.
- Add papaya, stir and let sit for 1-3 hours before serving.
