Ingredients

  • 500 g green/young papaya
  • 1.5 cup water
  • 1 cup white vinegar
  • 1/2 cup sugar
  • 1 tsp salt
  • 1/2 to 1 red chiles (to taste)
  • 2 tsp ginger, freshly grated

Directions

  1. Mix water, vinegar, ginger, chile, and salt and sugar.
  2. Add papaya, stir and let sit for 1-3 hours before serving.
