Honeydew Melon Salsa

Ingredients

  • 1/2 cup (125 mL) diced red onion
  • 1/4 cup (60 mL) chopped cilantro¬†1 Tablespoon (15 mL) fresh lime juice
  • 1 Tablespoon (15 mL) liquid honey
  • 1 teaspoon (5 mL) rice vinegar
  • Pinch of chili flakes
  • 1/4 teaspoon each salt and pepper
  • 1/2 of a honeydew melon, or other melon of your choice, seeded and diced, about 2 cups (500 mL)
  • 1 tomato, seeded and chopped (optional)

Directions

Combine red onion, cilantro, lime juice, honey, vinegar, chili flakes, and salt and pepper in a bowl. Stir in melon. Stir in tomato if using. Serve.
