Strawberry Microgreen Salad

Ingredients

  • 2 cups of your favourite microgreens
  • 1 cup strawberries, hulled and halved
  • 1/4 cup walnuts or almonds, chopped or sunflower seeds to make it nut-free

Salad Dressing

  • 6 strawberries
  • 1 tbsp Balsamic Vinegar
  • 1 tsp honey
  • 2 tbsp olive oil
  • salt and pepper to taste

  1. In a blender, blend 6 strawberries, Balsamic Vinegar, honey, olive oil and salt and pepper until smooth
  2. Toss microgreens and strawberries with dressing. Top with chopped walnuts, almonds or sunflower seeds. Enjoy!
