Banana Muffin Ingredients

  • 2 to 3 very ripe bananas, peeled
  • 1/3 cup (76g) melted butter
  • 1/2 teaspoon baking soda
  • Pinch salt
  • 3/4 cup (150g) sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 1/2 cups (205g) all-purpose flour

Directions

Banana Muffins

  1. Preheat the oven to 350 F. Line muffin tin.
  2. In a mixing bowl, mash the ripe bananas with a fork until completely smooth. Stir the melted butter into the mashed bananas.
  3. Mix in the baking soda and salt. Stir in the sugar, beaten egg, and vanilla extract. Mix in the flour.
  4. Pour 1 inch of batter in muffin tin. Pour cheesecake layer. Pour muffin batter to cover.
  5. Bake at 350 F for 20-30 mins or until the toothpick comes out clean. Rest for 5-10 minutes.

  • Temper egg
  • Do not overmix
  • Beat egg before adding
  • Mash bananas with fork
  • Melt butter

  1. In another bowl, Whisk cream cheese until soft
  2. Add egg, whisk
  3. Add sugar, flour and vanilla Until smooth.
