Besan Chilla – Savoury Chickpea Flour Crepes

Ingredients

  • Cilantro : ½ bunch Chopped
  • Green chilli – 1 (optional)
  • Onion- small chopped -¼ cup
  • Tomatoes -small chopped – ¼ cup
  • Ginger – 1 tsp finely chopped

Pantry & Spices

  • Water – ½ cup to 1 cup
  • Turmeric-½ Tsp
  • Salt as per taste
  • Sugar – ½ tsp
  • Kashmiri Red chilli powder – ½ tsp
  • Ajwain (Carom seeds) – ¼ tsp
  • Chickpea flour – 1 cup
  • Preferred oil or ghee

Directions

  1. In a large bowl add 1 cup chickpea flour, chopped tomatoes, onion, green chilli, carom seeds (ajwain) and cilantro.
  2. Add sugar, salt, turmeric, red chilli powder and add ½ cup water and mix all together.
  3. Make smooth mixture, add more water if needed. The mixture is more thicker than sweet crepes but thinner than pancake mixture.
  4. Heat a skillet or frying pan add 1 tsp oil and add with a ladle the mixture and let it cook for couple of minutes each side.
  5. Flip and cook other side.
  6. Serve hot with green chutney or tamarind chutney or ketchup.
