Buffalo Chicken Burgers

Ingredients

  • 1 lb. ground chicken or turkey
  • 1/2 cup breadcrumbs
  • 2 tbsp mayonnaise
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 2 green onions, finely sliced
  • 1/4 tsp black pepper
  • Pinch of salt

For buffalo sauce

  • 2/3 cup hot pepper sauce (like Frank’s RedHot)
  • 1/2 cup unsalted butter, softened
  • 2 tbsp white vinegar
  • 1 tbsp cornstarch
  • 1/2 tsp Worcestershire sauce
  • 1/8 tsp garlic power

For blue cheese slaw

  • 1 cup coleslaw mix
  • 1 green onion, finely sliced
  • 1/4 cup blue cheese dressing
  • 1/4 tsp salt
  • Pepper to taste

To serve

  • Buns
  • Pickles

Directions

Burgers and chicken wings combine forces! Make these in 1/4 lb. burgers for meal or make ten 1.5 oz sliders for a great party app. You can prep all the elements in advance (burger mix, sauce, and slaw), then cook and assemble when you are ready to serve.

  1. Combine ground chicken, breadcrumbs, mayonnaise, spices, onion and black pepper in a large bowl and mix. Divide into your burgers or sliders and place on baking sheet lined with parchment. Cover with plastic wrap and let sit in your fridge until you are ready to cook.
  2. For the buffalo sauce, combine hot pepper sauce, softened butter, vinegar, cornstarch, Worcestershire sauce and garlic powder in a blender. Blend until smooth. Place in sealed container and store in fridge until ready to use.
  3. In a medium bowl, toss coleslaw mix with 1/4 tsp of salt and let sit while you slice green onion. Add blue cheese dressing, green onion and black pepper then combine. Cover and let sit in fridge until you are ready to prepare your burgers.
  4. To prepare your burgers, place about 1/2 cup of buffalo sauce in a bowl or container wide enough for your burger to fit. On a hot grill or bbq, cook your burgers until fully cooked. About 7 to 10 minutes total. Then dip your hot burger in the buffalo sauce. Place on bun and top with coleslaw and pickles.
  5. To cook on a grill: Preheat the grill. Brush the satay with oil and sprinkle with salt. Place on hot grill until cooked through and golden brown on all sides – about 3 to 5 minutes on each side.
