- 4 chicken breasts
- 1 bunch Basil
- 1 bunch rosemary
- 1 bunch tarragon
- 1/2 lb. mozzarella
- Salt
- Pepper
- Chili
Sauce:
- 3tbsp Dijon
- 2 shallots
- 1c cream

Directions
Delicious Chicken Boudin! Serve chicken with sauce, perfect companion for any meal.
- Butterfly 2 chicken breasts, then pound them.
- Put in processor the other 2 breasts with salt pepper chili and chopped herbs.
- Spread blended chicken on butterflied chicken and cheese then roll up.
- Roll and tie in plastic wrap like a sausage.
- Boil for 45 minutes.
- Cool down slice.
You also can make the sausage just with the blended chicken.
For sauce
- Chop shallots
- Sauté Shallots and add Dijon and cream. Then stir until creamy.
