Chicken Noodle Soup

4-6 portions

Ingredients

  • 4 pieces of skinless chicken pieces ( breasts/legs)
  • large onion
  • 2 medium sized potatoes
  • 1 cup of finely chopped carrots
  • 2 tbspoon tomatoes paste
  • 1 bunch of parsley
  • Egg noodle vermicelli
  • 1 teaspoon turmeric
  • salt and pepper to taste
  • 2 lemons

Directions

  1. Add Washed and clean chicken pieces to a stock pot
  2. Add chopped onions
  3. Salt and pepper, dash of turmeric
  4. Cover with water and bring to boil
  5. Once it boils lower heat and continue cooking chicken until tender
  6. Remove chicken pieces and separate meat from bones and put back into pot – add 2 cups of hot water
  7. Add carrots and potatoes
  8. Add tomatoe paste
  9. Cook until vegetables are tender
  10. Add the vermicelli and continue cooking
  11. Add some of the chopped parsley and turn heat off
  12. Serve in a bowl and garnish with a little parsley and lemon sliver on the side
