Creamy Sesame Chicken Salad

Ingredients

  • 1/2 tsp fresh ginger, grated
  • 1 tbsp Kecap Manis (Indonesian sweet soya sauce)
  • 1 tbsp tahini
  • 1 tbsp white miso
  • 2 tsp fish sauce
  • 1 tsp sesame oil
  • 1 cup mayonnaise
  • 4 cups chicken, cooked and shredded
  • 3 cups fresh salad greens (iceberg, romaine, baby lettuces, etc.)
  • 2 stalks celery with leaves, sliced
  • 1/2 cup cucumber, sliced in quarters
  • 2 green onions, finely sliced
  • 4 slices of bacon, cooked and cooled, cut or crumbled into small crumbs
  • Toasted sesame seeds
  • Salt and pepper

Directions

  1. In a medium bowl, whisk to combine until smooth: ginger, kecap manis, tahini, white
    miso, fish sauce, and sesame oil. Gradually whisk in mayonnaise until mixture is
    thickness of heavy cream. Season with salt and pepper.
  2. In a large bowl, place shredded chicken, salad greens, celery, cucumber and green
    onion. Drizzle over some dressing, enough to coat – use your judgement. Toss to
    coat salad with dressing. If more dressing is needed, add some here. Season with
    salt and pepper. Once you’re satisfied, garnish with bacon bits and toasted sesame
    seeds.
