Easy Crispy Chicken

- 4 chicken breasts
- 1 cup breadcrumbs
- 1 tbsp Italian seasoning
- 1/4 cup parmesan, optional
- 1/4 cup mayonnaise
- 1 tsp minced garlic (or 1 clove, finely grated)
- 5 to 6 tbsp canola or grapeseed oil
- Salt and pepper

The method used to create a breading is so simple and can be replicated with other flavours – lemon pepper, Cajun, Greek, or just simple salt and pepper – just swap out the Italian seasoning and if you wish, omit the garlic. Choose your own breadcrumb adventure too – Panko, Italian, even crushed Corn Flakes work! Serve with your favourite side dish or make it a sandwich.
- Mix mayonnaise with minced garlic in a small bowl. In a shallow dish, combine breadcrumbs, parmesan, Italian seasoning, and a pinch each of salt and pepper.
- With your knife parallel to the cutting board, slice into the centre of each chicken breast leaving about 1/2 inch intact on the other end. Open sliced chicken so it lays flat and brush mayo mixture evenly on all sides. One by one, place chicken breast into breadcrumb mix and press to coat.
- Heat oil in a non-stick pan. Place chicken pieces flat into hot oil. Depending on the size of your pan, you may need to cook the chicken in batches. Fry on one side until golden brown, about 4 to 5 minutes. Flip, cook until golden brown, another 4 to 5 minutes.
- Remove chicken from pan and place on paper towel to soak up any excess oil. Serve immediately, or keep warm in a 325℉ oven on a baking sheet line with parchment paper or a baking rack.
