February Fun

Did January fly by in the blink of an eye, or is it just me? I feel like just yesterday it was New Year’s Day, and I was excited about the fact that I made it through two years of this pandemic without getting COVID... but boy did I jynx it! Unfortunately, my new year started off much different than expected. What I thought was going to be a fresh start to the New Year with a new job, celebrating friends who are expecting and newly engaged, actually turned into being stuck in the house for over a week with COVID watching endless Netflix series, doing puzzles, and playing Crazy Eight Countdown with my partner eating homemade soup from my mom. Although the downtime was nice after the Christmas holidays, I was completely ready and prepared to get out of the house and get the new year started on a productive note. Oh well, my dogs did not complain and loved every extra minute of snuggle time! Now that I have been in the office for a couple weeks, I am feeling excited about what is to come this year with our Farmers’ Market and the events we are planning throughout the year!

First Indoor Farmers' Market

I am filled with joy for our local vendors and our customers that we are able to put on the Indoor Farmers’ Market this year as last year’s market was cancelled. We have an amazing bunch of vendors coming together to sell their local food, products, baked goods, etc. each Saturday upstairs in the Mezzanine from 9AM-1PM starting Saturday, February 5th with Live Music every weekend! This week we will have live music from Donald Waugh!

Cooking Classes

As you know, each week we host a cooking class upstairs in the Market Kitchen. This class has become very popular, and we are beyond excited to see so many people interested in expanding their knowledge on local food: where to find it, what to do with it, how to eat it, and why to LOVE it. I hope to start organizing our weekly cooking classes in the Market Kitchen and aim to have this in effect by mid February to early March.

If you are interested in being a Saturday Chef this year between February and December, please email sregier@coventmarket.com so you can be added to the email list! We will be organizing the cooking classes similar to last year, through Eventbrite. We want to ensure we have the proper amount of people within the kitchen to safely social distance and follow any restrictions in place at the time. Please stay tuned for more information to sign up for these classes!

Beet Ravioli - Calendar Recipe

This recipe is brought to you by Chef Kyle Fee and Chef Erin Circelli-Russell with the help of their students from The Chef’s Table at Fanshawe College.

Devon’s Beet Ravioli (4 portions)

Beet Puree

2 small beets (approx. 200 g)

Simmer the beets until fork tender, peel and puree.

For the dough

2 Cups AP flour

5 Lg Egg yolks

1 Whole egg

1 Tbs Olive oil

¼ Cup Beet puree

1 Tsp Kosher salt

Pour the flour in a mound on a clean work surface, make a well in the center. Pour egg, olive oil, beet puree and salt into the well and use a fork to begin incorporating flour into the egg mixture.  Once the flour is incorporated begin to knead by hand.  Knead until the dough is smooth and elastic.  Cover and rest 30 minutes.

Ravioli filling

6 Baby golden beets, roasted and chopped

½ Cup Ricotta

½ Cup Chevre

½ Cup Walnuts, roasted and chopped

1 Tbs Mint, chopped

Combine the cheese, walnuts, mint and beet puree. Season.

Root vegetable cream sauce

1 Lg Parsnip, chopped

¾ Cup Rutabaga, peeled and diced

4 cloves Garlic, smashed

2 Cups 35% cream

1 Cup Vegetable stock

3 Tbs Butter

Combine all ingredients in a medium pot and cook gently until the vegetables are very tender. Transfer to a high speed blender and pure until very smooth.   Adjust consistency with a little extra vegetable stock if needed.
