Fresh Shrimp Ceviche

  • 2lb small shrimp
  • 2 cucumbers
  • 1lb tomato
  • 1/2 red onion
  • 2 avocados
  • 1 bunch cilantro
  • 6 limes
  • 2 chilies
  • 1lb hominy (optional)
  • S&P

Directions

  • Blanch shrimp (Cool down)
  • small chopped onions
  • marinate on lime juice together
  • seeds off cucumber
  • small dice the cucumber, tomato, avocado, cilantro, and chilies
  • add salt and pepper and mix everything with shrimp and hominy thoroughly.

Serve with crackers.
