Grilled Pineapple Summer Salad & Vinaigrette

Ingredients

For Salad

  • 1/2 lb. mix greens
  • 1 carrot
  • 1 cucumber
  • 1 lb. cherry tomatoes
  • 1/4 feta cheese
  • 1/2 grilled pineapple

For Vinaigrette

  • 1/2 grilled pineapple
  • 1c balsamic vinegar
  • 1/2c sugar
  • 1tbsp Dijon
  • 1tsp salt
  • 1lt oil

Directions

To prepare the salad

  1. Julienne carrots
  2. Chop cucumbers into half-moons
  3. Slice cherry tomatoes in half
  4. Crumble feta
  5. Core pineapple and dice it
  6. Mix everything and add vinaigrette on top or toss it

To prepare the vinaigrette

  1. Blend Pineapple, leave half in the blender and add sugar Dijon salt and splash of balsamic.
  2. Start blending at a high speed and alternate pouring oil and balsamic in very slowly but continuously.
