Grilled Pineapple Summer Salad & Vinaigrette

Ingredients
For Salad
- 1/2 lb. mix greens
- 1 carrot
- 1 cucumber
- 1 lb. cherry tomatoes
- 1/4 feta cheese
- 1/2 grilled pineapple
For Vinaigrette
- 1/2 grilled pineapple
- 1c balsamic vinegar
- 1/2c sugar
- 1tbsp Dijon
- 1tsp salt
- 1lt oil

Directions
To prepare the salad
- Julienne carrots
- Chop cucumbers into half-moons
- Slice cherry tomatoes in half
- Crumble feta
- Core pineapple and dice it
- Mix everything and add vinaigrette on top or toss it
To prepare the vinaigrette
- Blend Pineapple, leave half in the blender and add sugar Dijon salt and splash of balsamic.
- Start blending at a high speed and alternate pouring oil and balsamic in very slowly but continuously.
