Herbed Mushroom Crostini

Ingredients

  • 1 lb (500 g) mixed Ontario Mushrooms
  • 2 Tablespoon (30 mL) olive oil
  • 2 cloves Ontario Garlic, minced
  • 1/4 cup (60 mL) chopped mixed fresh herbs (try thyme, tarragon, parsley, chives, etc)
  • 1 Tablespoon (15 mL) balsamic vinegar
  • 1/4 teaspoon (1 mL) each salt and pepper
  • 1 baguette, sliced thin and toasted in oven
  • Shaved Parmesan or Asiago cheese

Directions

  1. Halve or quarter mushrooms depending on size. In large skillet over medium-high heat, heat oil with garlic for 30 seconds. Stir in mushrooms; sauté for 5 minutes. Add vinegar, salt and pepper; cook for 1 minute. Stir in fresh herbs.
  2. Top each slice of baguette with warm mushroom mixture, top with shaved Parmesan or Asiago cheese.
  3. Serve and enjoy!
