Pan Con Tomate (Bread with Tomato)

  • 1 baguette or ciabatta loaf
  • Olive oil
  • 2 tomatoes
  • 2 garlic cloves, peeled and sliced in half
  • Red wine vinegar, optional
  • Kosher salt

Directions

  1. Using a box grater, grate the tomatoes over the large holes into a bowl. Season the tomato puree with salt and a scant splash of red wine vinegar.
  2. Slice bread in half length-wise then in 2” slices. Brush the bread generously with extra virgin olive oil and arrange on a sheet pan. Broil for 2 to 3 minutes or until the bread is lightly golden brown.
  3. When the bread is ready, rub the garlic cloves over the hot bread, then spread the grated tomatoes over the bread. For that extra touch, drizzle with olive oil and a light sprinkle of Maldon salt.
