Ingredients

Produce

  • 1lb potato
  • 2 bunches of cilantro
  • 1 bunch of mint
  • 1 – 2 thai chillis
  • 2 lemons
  • 5 to 6 garlic cloves
  • 1 small chunk of ginger
  • 6 to 8 seedless dates
  • ½ cup of seedless Tamarind  or tamarind paste
  • 1 Pomegranate

Indian Snacks

  • Pani puri shells
  • Sev (thinnest)
  • Boondi
  • Papdi (papri)
  • Natural peanuts or unsalted roasted peanuts
  • Puffed rice

Dairy

  • 2 cups of plain yogurt

Pantry & Spices

  • 2 cups of brown Chickpeas
  • Cumin powder
  • Coriander Powder
  • Dry mango powder (Aamchur)
  • Salt
  • Black pepper
  • Black Salt
  • Pani puri masala
  • Chaat masala
  • Ginger powder
  • ½ cup Jaggery
  • ½ tsp Fennel
  • Kashmiri chilli powder

Directions

Green Chutney Recipe

  1. In a food processor, add washed and cleaned 1 bunch of Cilantro, 1 bunch mint leaves, garlic cloves, ginger, 1 tsp salt, 1 tsp chaat masala, 1 tsp dry mango powder, cumin seeds, ½ tsp black pepper, 1 lemon, 2 -3 ice cubes, 1 tsp sugar, 1 thai chilli (optional, totally exclude it if you don’t want any heat). Pulse it until a smooth paste, add more ice cubes or cold water to make watery.  

 

Tamarind Chutney Recipe

  1. In a pan add ½ cup tamarind, ½ cup seedless dates, ½ cup jaggery, and pour 3 cups of water and let it come to boil. 
  2. Simmer till 10 mins and add 1 tsp coriander powder, ½ tsp cumin powder, 1 tsp kashmiri red chilli powder, ½ tsp dry ginger powder and salt to taste.
  3. Mix and mash tamarind and dates, simmer for next 2 mins.
  4. Blend the mixture in a blender, and strain the puree. 
  5. Add into the jar and ready to consume. 

 

Pani puri stuffing

  1. Mash 5 medium large boiled potatoes, and 2 cups of boiled brown chickpeas, 1 tsp kashmiri red chilli powder, 1 tsp chaat masala, 3 tbsp green chutney, ¼ cup of chopped cilantro, 1 tsp salt and mix together.

 

Cilantro Mint Water

  1. In 3L water add, ⅓ cup of freshly made green chutney, 1 lemon juice, 1.5 tsp black salt, 2 tbsp Pani puri masala, salt as per taste and mix it. 
  2. Add some ice cubes to make it colder. 

Note: Adjust those spices and lemon as per your taste. 

 

Assemble Pani puri

  1. Use a thumb to crack a small hole, add the stuffing and add cilantro mint water or Tamarind water or both and eat! 

 

Bhel

  1. In a large Salad bowl, add 5 cups of puffed rice, ½ cup chopped onions, 1 cup chopped tomatoes, 1 pomegranate and 1 cup chopped cucumber.
  2. Add roasted peanuts, sev, crushed Papdi, and chopped cilantro.
  3. Add 3 tbsp green chutney, 3 tbsp tamarind chutney and ½ lemon juice.
  4. Note: You can add any snacks, or chickpeas or anything you would like, mix and serve with more sev on top and chopped cilantro.
