- 1/2 cup (125 mL) diced red onion
- 1/4 cup (60 mL) chopped cilantro
- 1 Tablespoon (15 mL) fresh lime juice
- 1 Tablespoon (15 mL) liquid honey
- 1 teaspoon (5 mL) rice vinegar
- 1/4 teaspoon each salt and pepper
- 3 peaches, peeled, pitted, diced
Combine red onion, cilantro, lime juice, honey, vinegar, chili flakes, and salt and pepper in a bowl. Stir in peaches. Serve immediately.
