Shrimp Tacos

Ingredients
- Corn tortillas
For the Shrimp
- 1 lb raw jumbo shrimp, peeled & tail-off
- 1/2 tbsp olive or avocado oil
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- salt
- pepper
- cayenne
For the Cilantro Lime Slaw
- 3 cups shredded cabbage (or coleslaw mix)
- 1/3 cup chopped cilantro
- 1/3 cup diced red onion or shallot
- Juice from 1/2-1 lime, depending on preference
- 2 tbsp mayo
- Salt to taste
- A few drops of your favourite F.A.M. Hot sauce
For the Peach Salsa
- 1 cup diced peaches
- 1/2 cup diced roma tomato
- 1/4 cup chopped cilantro
- juice from 1 lime
- salt to taste
- 1/4 cup diced red onion or shallot
- 1/2 jalapeƱo, diced (with seeds)

Directions
RECIPE (gluten free, dairy free) makes about 4 tacos, with some leftover slaw & salsa
- Toss shrimp with oil & seasonings. then spread onto a parchment-lined air fryer tray or baking
sheet. air fry (or bake) at 400F for about 8 minutes or until cooked through. - Prepare the slaw by tossing all ingredients in a large bowl until combined.
- Prepare salsa by mixing together all ingredients in a medium bowl. Warm up your tortillas and then assemble starting with the slaw, then the shrimp & finally the peach salsa. enjoy!
