Shrimp Tacos

Ingredients

  • Corn tortillas

For the Shrimp

  • 1 lb raw jumbo shrimp, peeled & tail-off
  • 1/2 tbsp olive or avocado oil
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • salt
  • pepper
  • cayenne

For the Cilantro Lime Slaw

  • 3 cups shredded cabbage (or coleslaw mix)
  • 1/3 cup chopped cilantro
  • 1/3 cup diced red onion or shallot
  • Juice from 1/2-1 lime, depending on preference
  • 2 tbsp mayo
  • Salt to taste
  • A few drops of your favourite F.A.M. Hot sauce

For the Peach Salsa

  • 1 cup diced peaches
  • 1/2 cup diced roma tomato
  • 1/4 cup chopped cilantro
  • juice from 1 lime
  • salt to taste
  • 1/4 cup diced red onion or shallot
  • 1/2 jalapeƱo, diced (with seeds)

Directions

RECIPE (gluten free, dairy free) makes about 4 tacos, with some leftover slaw & salsa

  1. Toss shrimp with oil & seasonings. then spread onto a parchment-lined air fryer tray or baking
    sheet. air fry (or bake) at 400F for about 8 minutes or until cooked through.
  2. Prepare the slaw by tossing all ingredients in a large bowl until combined.
  3. Prepare salsa by mixing together all ingredients in a medium bowl. Warm up your tortillas and then assemble starting with the slaw, then the shrimp & finally the peach salsa. enjoy!
