Spiced Cocoa Popcorn

  • 2 to 3 tbsp coconut oil
  • 1/2 cup popping corn
  • 3 to 4 tbsp butter, melted
  • 3 tbsp powered sugar
  • 1 tbsp + 1 tsp cocoa, dutch processed
  • 1 tsp cinnamon
  • 1/2 tsp kosher salt
  • Pinch of cayenne pepper

Directions

  1. In a small bowl, combine powdered sugar, cocoa, cinnamon, salt and cayenne.
  2. In a large, heavy-bottomed saucepan melt coconut oil over medium heat. Add a couple of popcorn kernels, cover the pot and wait for the kernels to pop.
  3. Once the kernels pop, lift lid, pour in the remaining popcorn kernels then cover again. Give the pot a light shake to cover the kernels in hot oil.
  4. Continue cooking the popcorn, lightly shaking the pot occasionally to cook the kernels evenly. Once the kernels start popping, tip the lid just a touch to
    allow steam to escape. Continue cooking until the popping sound slows to about one pop per every few seconds. If the popcorn begins to overflow, tip a bit into a bowl and return pot to the heat. Once the popping has stopped, remove lid to let steam escape.
  5. Place popcorn in a large bowl, drizzle with melted butter and toss to coat. Using a small sieve, dust a generous amount of cocoa mix over the popcorn, then toss to distribute cocoa to all kernels. Repeat until you are satisfied with amount of seasoning on your popcorn. If needed, season with a pinch of salt.
