Tomato Salad with Tahini Dressing

Ingredients
- Several assorted ripe tomatoes, medium slice
- 1/3 cup Tahini
- 3-4 Tbsp water, or more if needed
- 2 Tbsp fresh lemon or lime juice [zest and juice of a lemon]
- 2 Tbsp olive oil
- 1 – 2 tsp maple syrup or to taste
- 1 Tbsp toasted sesame oil (or use an additional tablespoon of olive oil)
- 1 clove garlic, minced
- 1/4 tsp sea salt, or to taste
- 1/2 tsp cumin
- handful chives, mint, or Italian parsley for garnish
Directions
- Blend tahini and water together, adding more if needed to make it more fluid. Add balance of ingredients, taste and adjust to your taste. Spread some of the dressing on a large plate. Slice tomatoes and place on top of the tahini. Drizzle more dressing on top of the tomatoes, and garnish with chives or parsley.
