Tomato Salad with Tahini Dressing

Prep Time:



  • Several assorted ripe tomatoes, medium slice
  • 1/3 cup Tahini
  • 3-4 Tbsp water, or more if needed
  • 2 Tbsp fresh lemon or lime juice [zest and juice of a lemon]
  • 2 Tbsp olive oil
  • 1 – 2 tsp maple syrup or to taste
  • 1 Tbsp toasted sesame oil (or use an additional tablespoon of olive oil)
  • 1 clove garlic, minced
  • 1/4 tsp sea salt, or to taste
  • 1/2 tsp cumin
  • handful chives, mint, or Italian parsley for garnish


  1. Blend tahini and water together, adding more if needed to make it more fluid. Add balance of ingredients, taste and adjust to your taste. Spread some of the dressing on a large plate. Slice tomatoes and place on top of the tahini. Drizzle more dressing on top of the tomatoes, and garnish with chives or parsley.
