THIS SALAD. People say they can’t believe how long it lasts – and there are reasons! At Killdeer Food Co they plant it every one-two weeks all season, harvest first thing in the morning, with sharp knives by hand (there are a lot of handy gadgets out there for their size of operation but they all have an effect on the on the final product and Ellen still thinks by hand is superior), cooled & washed in three batches of water, spun dry and chilled before being bagged. And they mix in a little (shooting for 15%) arugula and spicy greens mix for complexity! Come and get it at the Farmers Market!
First of the fioretto sprouting cauliflower. Sungold Market Garden has started selling sprouting cauliflower in bunches much like sprouting broccoli. Since they don’t use any insect controls, they do find some imperfections in their cauliflower. Bunching allows them to fully inspect each stem for quality, ensuring the end product is free of damage and any hitchhikers. Available now online and at the Farmers Market!
