Wild Mushroom Soup

Ingredients
- 2lb mix mushrooms (sliced)
- 1lb white onions (julienned)
- 3 garlic (minced)
- 200mL tomato paste
- ½ bottle red wine
- 1 Lt chicken (veg) stock
- 1 Cup 35% cream or milk
- 1/4lb butter
- 1/2 Cup flour
- 1 Cup grated cheese
- Salt and pepper
- 1 tbsp paprika

Directions
- Caramelize onions
- Add garlic when onions are browned
- Stir tomato paste
- Add mushrooms and mix (3/4 of mushrooms)
- Add red wine (Keep stirring all the time)
- When boiling add butter to melt
- Add flour with S&P and paprika
- Add chicken or veg stock
- When boiling add the of the mushrooms with cream, cheese adjust the flavor
- Simmer for 10 min
