Wild Mushroom Soup

Ingredients

  • 2lb mix mushrooms (sliced)
  • 1lb white onions (julienned)
  • 3 garlic (minced)
  • 200mL tomato paste
  • ½ bottle red wine
  • 1 Lt chicken (veg) stock
  • 1 Cup 35% cream or milk
  • 1/4lb butter
  • 1/2 Cup flour
  • 1 Cup grated cheese
  • Salt and pepper
  • 1 tbsp paprika
  • Herbs

Directions

  1. Caramelize onions
  2. Add garlic when onions are browned
  3. Stir tomato paste
  4. Add mushrooms and mix (3/4 of mushrooms)
  5. Add red wine (Keep stirring all the time)
  6. When boiling add butter to melt
  7. Add flour with S&P and paprika
  8. Add chicken or veg stock
  9. When boiling add the of the mushrooms with cream, cheese adjust the flavor
  10. Simmer for 10 min
